Pappardelle are large, very broad, flat pasta, similar to wide fettuccine. These “Antica Madia” pappardelle have a special texture. They only need to be cooked for 3-4 minutes. Unlike the "cousins" tagliatelle (for which the Academy of Italian Cuisine has indicated the official size of 8 mm), the width of the pappardelle can vary from 2 cm up to 4 cm. The thickness is around 0.8 mm and the length is at least 20cm! Typical of the home tradition, the dough is rustic and rough to the touch. Famous recipe: try them with full-bodied and strong-flavored condiments, wild boar, hare, or if you prefer a vegetarian choice, try them with porcini mushrooms: you will be delighted.
