EGG ALBESI PASTA
The Egg Albesi of "Antica Madia" are a pasta produced according to the tradition of the Langhe, with eggs and wheat flour from local mills. Albesi are a pasta reminiscent of tagliatelle, but with a smaller thickness, here packaged well stretched, not in a skein.The use of top quality flours and the high egg content make this type of pasta a truly unique product. In this recipe, I propose a quick dish, but also prepared with a simple sauce with mushrooms and "pancetta" (bacon), it will still be a first course with a truly delicious flavor. Making them with mushrooms, browning them in garlic, and frying them together with the oil for a couple of minutes, while in another pan cook the bacon (even without oil), adding to the mushroom sauce and mixing well. Pour the mixture over the pasta, and don't forget the Parmesan !
